01Where the name comes from

Three ingredients. One skewer.

The gilda: an olive, an anchovy and a pickled pepper on one skewer

The name comes from the gilda, a Spanish tapa we were served in Seville: a green olive, a salt-cured anchovy and a pickled pepper on one skewer. Each ingredient is one branch of the studio. The skewer is the team that holds them together.
